It is perfectly possible to buy a 4 video channel unit, they are just a bit
more expesive as the video amplifiers are much more expensive than the
audio
ones.
As delivered, a 4 channel video unit probably wouldnt work too well as its
input impedance is75ohms which for most audio sources is too low, but by
removing the input termination audo would be carried just fine. You would
need to refit the termination when you wanted to change over to SPDIF. (The
Mk2 units will have switchable termination)

Composite, S-Video, Component and RGBS all use the same circuitry, just
1,2,3 or 4 circuits respectively therefore you can carry whatever mix you
want. eg 2 lots of S-Video.
