or if you want to get really simple, I brought an IR transmitter board
(universal remote) and wired it to a PIR, so when the PIR gets triggered
the
transmitter sends the record signal to my video, then 10 seconds after it
turns off.

A word of note -

If you use a camera multiplexer with motion detection software, choose the
software carefully as unless it is designed with multiple cameras in mind,
it would likely detect each change of camera as motion.
