If you were using a long S-Video lead between the two then I would certainly suggets an S-Video KAT5 however since you're running RGB+Sync then Keith does do a suitable KAT5 which will send/receive the four required video channels (this is what I use for my component signal). Basically if you're happy with what you're getting from the setup as it is then great but if you're noticing any interference then definitely try out a set of KAT5's.
 
I'm piping S-Video 25-30m up from the AV stack to our main bedroom and it's as close to perfect as you'd ever get however running S-Video unaided on just a couple of 75ohm video cables smears like buggery!

Sony VW10HT projector Sony DVP S525D DVD player no switching just a straight connection.

To be honest I would say not necessarily - not if you're using RGB output from the projector.
 
I'm using component video out from the projector rather than S-Video and therefore running Component Video from the DVD player int the Video Scaler, then RGBS out t the projector. in this instance the long RGB run to the projector was the limiting factor as that's at high resolution (1280 x 1024). Driving that resolution over the 8m lead that I have was causing a softening effect. Shortening that cable down to 1.5m makes a noticable difference. Extending the component cable was something that I didn't want to do and this is where the KAT5s were a bonus (I had actually bought them to sort an earth loop problem out).
 
What projector are you using? What DVD source? Are you doing any sort of switching of the signal? (i.e. are you running any other sources to it?)

I have a 10 mtr RGB lead using professional cable going from my DVD to the projector, would it be worthwhile changing this for KAT5s and using the S-Video output?

Basically I was running an 8m RGB lead to my projector from my video scaler ... I replaced the 8m RGB lead with a short RGB lead but a KAT5 TX/RX set between the source component (DVD) and the video scaler. (i.e. I moved the scaler to be near the projector rather than near the source component) and the improvement in quality from this change is just superb.
 
I even crimped a couple of RJ45s ont the free ends of an almost full box of CAT5e cable (probably 20m used) and I really don't think I could tell any difference between having 30cm, 10m or 270+m of CAT5e connecting the two. There was *MAYBE* a bit of brightness difference between the 10m and 270m but as the tests were done during the day when daylight is an issue then I can't be certain.
 
Superb piece of kit and I really wish Keith could make some money on them ... I'm hoping to show a set working to someone in the retail trade in late August (hopefully Keith will have an IR return set working by then as that will really float this guys boat) and maybe drum up some usefull additional numbers of sales of units for him.

I just had to tell you all, I’ve been busy installing a couple of custom modules that Keith made up for me before going on h liday to take a composite and an S-Video from my amp to my projector.

 

WOW!

 

If you have a projector, get ont Keith immediately, you need these modules, WOW, what a difference for a shade over £100! Now I wish I’d done this a few days ago, like when they touched down, simply amazing.

 

Can you tell I’m impressed yet?
