Rotary encoders are available with push switched built in.
You just need to code it well in the software to get the speed of response.
With software driven controls you can also do things like
<press button> step to next item
<hold button> step through items at x items per second and speed up
the
longer it is held.

I dont think we will have a problem on speed.

We have to remember the enginering side, could be difficult. Look at the
effort Keith has had to put in to get the KAT5's. The more complicated the
less chance we have of making it fly.
