So if I want to update the virus definitions I have to do this on each machine?

simple answer ... EVERY SINGLE MACHINE needs to be proteced :-)

many people, including some here, will say you only need AV on the interface servers [mail, routers etc] ... this provides no protection whatsoever from many types of virus and transmission types.

I assume I would run Zone Alarm on this machine but what about Norton AV does it go on this one only or each PC on the network, if only on the server how would I know when an alert comes up.
