It shouldn't be a problem. There are motherboards around that have 4 controllers (4 connectors) so you can put CD+7 Hard disks.
Put that in big case with big fans, and that's it. Install whatever OS you want and put that on network.
It should be cheaper than any "specialized" solution if 7disks are enough and you don't need some ultra transfer speed.
