Very little indeed. They are usually *exactly* the same builds of the code.
The difference will be that the SBS installer optimises each app to run on a
single box, the licencing is more restrictive, and SBS insists on being the
first domain controller in a new domain. (This is the mechanism used to stop
big enterprises using SBS as a cheaper way of obtaining all the bits instead
of buying seperately).

Of course, SBS doesn't include sharepoint or mobile server, so you'll have
to add those seperately anyway.

Personally, I'd install & run SBS, then add the extra bits required...
