I am only new to the technology but we are really getting into it now.
There are plenty of introduction to the technology. I would try
fwd.pulver.com (a popular SIP registrar) and www.asterisk.com. Asterisk is
the GPL PBX software that runs on Linux. It is mind-bogglingly powerful.

Yes, I found it confusing at first too. Basically, FXO is a piece of
hardware that connects the PC to the PSTN/ISDN/etc. line (like a modem).
FXS is a piece of hardware that connects analogue telephones to the PC.
VoIP phones such as the Snom connects to the network via Ethernet.

FXS hardware is not essential if no analogue phones are used. Likewise,
FXO is not essential if only VoIP calls are made. However, having FXS
hardware would allow cheap analogue phones (eg. DECT) to be used for voice
and VoIP. Having FXO hardware would allow VoIP to PSTN connection.

Perhaps we should start up a mailing list for VoIP.
