A centre speaker in a 5.1 / 6.1 / 7.1 etc setup is rather important as
all the dialogue and a lot of other sound comes from it (depending on how
the soundtrack was mixed). It’s definitely worth having a good
quality centre which is also well matched to the front left and right
speakers.
Have a look at any surround sound explanation and it’ll tell you
this. Try www.dolby.com for a starter for 10!

I'm just using an old stereo speaker as my centre, what does it actually
do? Are there any benefits to be had using a "proper" centre speaker?
What's the difference, and would I be able to butcher the thing I'm
using, and build my own?
