Starting on New house soon

Hi people,
I'm starting on a new house soon and i'm new to all this HA stuff.
I want to network my whole house for TV, audio and of cource my
PC's. Also i'd like to have remote lighting etc. Wheres a good
place to start. I'm going to run cat5 to a central patch panel. But
what will i use to network my sources to my tv's and how will i
control my audio?
One other thing i want to use a projector for my computer and for
watch tv etc. Whats a good one and i want a remote screen that can
be recessed into the celing. Help Help!! I know i ask a bit much
but us newbies have to.
