The Cat5 to the plasma is a good idea - I used on for serial control of the
plasma from node0.

Incidentally - you may also want to think very carefully about the
particular model of plasma and bracket that you might use - mine has very
little space between the back casing of the plasma and wall and only then
at the very bottom. I certainly couldn't get a traditional phono style
socket (at 90deg to face plate) with lead behind there!
