A 300W psu will supply a maximum of 300W. If you only need 140W, it will
only supply 140W.
However, they are not 100% efficient in their conversion between mains
AC and the DC voltages your PC uses. I believe around 70-80% is typical
(although I think quoted figures are at full power delivery), so the
real power consumption is probably around 200W.
A clamp style ammeter on the PC's mains cable should be able to confirm
how much current you are drawing of course.
