Martin,

Have you got an installation drawing for the system - something to show
you what wires to connect to where etc. ?
Does the unit have a central control box that the basic control panel
plugs into or are the fans etc. wired individually.
If you have a drawing please post it somewhere, or send it to me
off-list and I'll do what I can to interpret it.

I see on the UK_Selfbuild list there was a suggestion to use an
intelligent relay (Siemens Logo et al) but you could also consider the
NetIOM and the Web Brick, both are xAP-able (maybe xPL too, I'm not
sure) and can switch outputs based on inputs etc. IIRC they also have a
limited number of analogue I/O. The Web Brick also has a Dallas 1-Wire
input so you can connect a temp sensor. A further alternative may be the
Barionet unit from Barix/Laser. IIRC this has been xAP-ed too and, like
the Web Brick, has a 1-Wire interface.
