[OT] - capture sound to MP3 ?

Sorry for the OT post, please feel free to reply off-list unless you think
this may be of use to others.

I'm looking at recording the sermon 20 to 30 mins max (possibly the whole
service depending on feasibility) from our local church to MP3 or similar
so
that it can be distributed electronically. Getting the audio is no problem
as we can get this direct out of the mixing desk.

In an ideal scenario I'd have a PC with ADSL and upload to the web
immediately after the service, however I doubt I'd get the budget for this
:)

We already record to tape, however the person responsible doesn't have
sufficent equipment or the time to convert this to mp3, so I guess I'm
looking for a simple audio capture device with easy PC download or a cheap
PC with CD burner / USB memory stick.

Anyone do anything similar ? Any suggestions ?
