Many MP3 players can do voice recordings to MP3 - but usually only via
their own built-in mic. However, more models are appearing that have a
line-in, so you could connect it directly to your mixing desk.

It can record MP3 from a line-in socket, and has a SD card for easy
transportation of the files to a PC with internet access.

Im sure there any many MP3 players that offer recording via a line-in -
this was just the first one I found so cant comment on quality etc.
