I'll be doing the same sort of thing myself shortly with Myth - PVR250
for Sky STB input and multiple PCI DVB-T cards for Freeview.

There is work underway on Myth at present to do a rewrite for the
DVB-T card handler - basically at present if you want to record a
channel and there's no unused card then you're out of luck, however
when the new code is in place if there's an active card already tuined
to the same Mux as the channel you want then it'll use that - so if
you have as many DVB-T cards as there are Muxes then you'll be laughing...

I can't remember if there's plans to record a whole mux in one go with
Myth.

Well the fiddly setup etc is what I'm playing around with at the
moment - I've built my own Linux "media server" distribution
(inc.
Myth) and another Myth Frontend distribution and I'm trying to get it
all to automagically configure without manual intervention...this is
my ongoing project :-)
