Of course you could - however you would have to spend your own time
assembling and configuring the kit, ensuring that it was stable, ensuring
that it had the right combinations of hardware and drivers and that
everything was supported - plus of course once you have done that then you
have nothing to fall back on in the way of consistent and unified
support...

As usual, if you can do it for less and you're happy to spend the time and
effort doing it then you're obviously welcome to do it. Some people don't
have the time, knowledge or resources to spend time bolting together and
debugging a system but can afford to pay the cost for a system that is
already prebuilt. I was just illustrating that the "system" that
was asked
for does already exist - it just commands a premium.
