Feeding any unbalanced line level audio via unshielded cable (eg
speaker
cable or T&E) is likely to give a load of problems , most particularly
mains hum and interference / clicks / pops etc.  Using shielded audio
cable would improve this but is still destined to disappoint. Out of
your two choices the CAT5 is much better as at least later you could add
KAT5 units at each end if needs be and feed balanced audio, plus it's
screened even if it has the wrong electrical characteristics.
