You could do this with a bunch of VOIP kit and a wireless AP/bridge
pair, but wouldn't it be easier to just buy a DECT phone and basestation?

The Apple Airport express is nice and portable - plugs straight into the
mains socket. AIUI you can create a WDS network using two of them, or an
Airport Extreme/Express pair, to link two halves of a wired network.
