I use punchdown blocks from austin taylor to extend a set of existing
CAT5 wires.

As long as you keep the pairs twisted as much as humanly possible to the
terminals I dont see any
reason why you should be able to use gigabit ethernet.

Still trying to find a solution to extend around 50 Cat5e solid core
