Mark,
The follow-up by Pete pretty much summed it up. You need a DNS A record
for the server hosting the Mail Server, also make sure you have a PTR
record(sometimes known as reverse DNS, rDNS); this regsters the IP
address to name.
Then you need to setup an MX record that points to the A record you
just created. The MX record also needs to have a preference and
normally this would be 10 (preference can be 1 to 100; but first
preference is usually 10 followed by 20, 30 etc for secondary and
tertiary servers that may also act as backup mail servers)
Don't worry about SPF record for now
