The closest to this I'd ever found here were panel-mount couplers,
where you'd then connect half a patch lead to the inside connector and
wire that to the board.

If you can get a look at some Leviton (US) jack connectors they may do
what you want. I know this one is Cat6

for more) but it looks like you could file out a suitable hole the the
panel and mount it in there. Maybe get a wall plate while you're at it
and use that as a template for the hole?
(sorry if it's a bit vague, I remember looking at them about 18months
ago in Home Depot but had no immediate need at the time...)
