I had considered that possibility, - BUT:
What "processing" exactly would they be doing on the Monday? -
The order
was processed automatically, - I received an order confirmation email,
and I subsequently received a "Payment taken successfully" email,
all on
Sunday evening...

They will process it on the Monday and 5 days from that would be the
following Monday.
