Just one switch. Everything is set to 100mb full duplex.
If it was that it wouldnt explain why
machine 1 to machine 2 - 100mb
machine 2 to machine 1 - 100mb
machine 2 to NAS - 100mb
it is just machine 1 to NAS which is slow.
Doesnt add up.

Are you only using one switch?
You may have an issue with auto negotiation, ideally you want 100Mbit
Full Duplex

I have a strange problem where I cant get fast speeds transferring files
from one my my hard wired machines to one of my NAS boxes. Only seems to
be about 10mbps.
I can transfer from this machine to another machine at 100mbps.
I can transfer from the second machine to the NAS box at 100mbps.
So there cant be a problem with the wiring between the first machine,
second machine, or NAS box.
What else could it be??
