If I've understood you right you're asking can you plug the wii into
the amp with the component cable and just run a s video lead from the
amp to the tv.

Depends if the amp can convert signals.  It would be unusual i think
for an amp to down convert signals but its possible.

Normally what I look for in an amp (and the Yamaha's seem to be the
most capable of this) is the ability to plug in various sources i.e.
composite, s video, component, and have them all coming out of the
component lead.

I know many amps dont convert so you'd have to have both a s video and
a component coming from the amp to the tv.
