LED brightness isn't linear with voltage or current. What you want is
Pulse Width Modulation. I should imagine you could trip over a few PWM
based LED drivers that would take an analogue control voltage if you
were to peruse the usual device catalogues (Farnell, RS, Digikey etc)...
