Yes, that is possible - but the longer cable runs might create problems

which would depend on the total cable run.  I've used alarm cable
for
DS18S20s as it has a lower capacitance than Cat5 cable.  However I'm
sure
there are people that have used Cat5 on long runs without any problems.
